Saru Jayaraman, attorney and co-founder of Restaurant Opportunities Centers United, helped start the sanctuary restaurant program shortly after the presidential election. The California-based organization quickly had establishments from around the country sign up for the movement.

“There were a lot of vulnerable populations being attacked,” Jayaraman said. “It created tension in the industry. I felt like I had to do something.

“It’s already become much bigger than I ever expected.”
